The kitchen leans heavily on Hui and Xinjiang traditions, and the menu reads like a tour of that region's staples. Hand grabbed lamb arrives simply seasoned so the meat itself carries the dish, while hand torn numbing pepper chicken pairs the sharp tingle of Sichuan style peppercorns with a milder, more savory northwestern base. Naan stuffed and topped with meat gives the bread a role beyond an accompaniment, and grilled lamb ribs come charred at the edges with a smoky finish.
