Bugis has always pulled a younger crowd, shaped by the street market along Bugis Street, the arts institutions clustered around Bras Basah, and the flow of students from the campuses nearby. Poulet fits neatly into that setting from its spot on the fourth floor of Bugis+, the mall joined by an overhead link bridge to Bugis Junction and reachable on foot from Bugis MRT.
The kitchen is built around one dish. Whole birds are brined for close to a day before roasting, a slow process that leaves the skin burnished and the meat under it still moist. Chicken arrives as a quarter, half, or whole, and the choice of sauce does much of the work in setting the tone of the meal. Mushroom Cream is the steady favourite, while Diane leans savoury and peppery, Black Pepper Cream carries more bite, and Cranberry pulls the plate toward something sweeter.
Around the roast sits a wider French bistro menu. Starters run from French Onion Soup to Truffle Shoestring Fries and Glazed Winglets tossed in Sriracha hot sauce. The dining room follows the brand's general look, warm and unfussy, with enough table space to seat groups without much trouble. Given the mall's position at a busy interchange of shoppers and commuters, the outlet tends to fill quickly through the middle of the day and again toward evening. It works as much for a quick solo lunch as for a family sitting down together after a round of shopping.
