On the fourth floor of The Mira Hong Kong, a hotel that has anchored Nathan Road in Tsim Sha Tsui since the 1970s, Cuisine Cuisine serves Cantonese food against a backdrop of jade green walls and a view over the treetops of Kowloon Park. The dining room seats guests along a run of windows, while a series of private rooms, the largest holding up to 24 people, sit just off the main floor for family gatherings and business dinners.

The kitchen works from a Cantonese base but experiments freely with the register of individual dishes. A tasting menu might move from steamed wild mushroom dumplings finished with black truffle to a plate of crispy prawn coated in salted egg yolk, one of the richer takes on a dish now found across much of Hong Kong's Cantonese scene. Elsewhere, sautéed Australian lobster is cooked with spicy preserved vegetables for a dish that balances the sweetness of the shellfish against a sharper, more fermented edge, and a whole chicken is boned, stuffed with almonds and minced shrimp, then finished in a lemon sauce that cuts through the richness of the stuffing. A pan-fried tenderloin, cooked with blaze mushroom, garlic and spring onion, sits closer to a Western steakhouse plate than a typical Cantonese main, a sign that the kitchen doesn't limit itself strictly to tradition. Vegetables are not an afterthought either: a soup of seasonal greens, yellow fungi and lily bulbs is built on a light fish stock rather than the heavier meat based broths common elsewhere on the menu.

Tsim Sha Tsui is one of Kowloon's busiest districts, and Nathan Road runs directly past the hotel's entrance, putting Cuisine Cuisine within walking distance of Kowloon Park and the shopping strip that runs toward Mong Kok. MTR access is a short walk from either Tsim Sha Tsui or Jordan stations. The restaurant has carried a Michelin recommendation for several years, a distinction its Cantonese kitchen has kept even as the surrounding hotel dining scene in Tsim Sha Tsui has grown more crowded with competitors.
